With our food sourcing choices, we seek to maximize the positive impacts and minimize the negative impacts on your health, the environment, and our local agricultural economy. We grow a number of our own veggies and herbs and source as much food as we can from local Vermont farms. We change up our meals every month to be able to addapt our menu to the food that is in season.
Additionally, we participate in the Meatless Monday movement, which is a campaign to reduce meat consumption for environmental reasons. Globally, agriculture uses 38.4% of the world’s land area, and one third of the world’s total carbon emissions come from food production, transportation, and waste. Meat has a much larger carbon footprint than plant-based proteins, so cutting out meat for even one day a week can have a big benefit for our climate. Our food choices have a huge effect on our own health, as well as the health of the planet.
