Recipe of the Month: Summer Smoothies

Last week’s heatwave was quite the test to see if we are ready for the summer. Hopefully you were able to find cool shade, a body of water, or at least a cold beverage to sip on. Here in Craftsbury, everyone flocked to Big Hosmer and the surrounding creeks to get away from the baking sun. Though they don’t take too much skill or prep, now is a great time to hone in your smoothie making skills to be ready when the heat strikes again. Here’s a few smoothie recipes using different ingredients in case you’re getting tired of the usual go to berry recipes.
Green Grower Smoothie - serves 1
Ingredients:
1 c water or coconut water
2 large kale leaves (keep stems on if using a strong blender)
½ c lemon, peeled
½ inch piece of ginger
½ cucumber
1 pear, cored
1 T coconut oil
1 sprig fresh mint
Optional: ½ scoop plain protein powder
Exotic Sweet Escape Smoothie - serves 2
Ingredients:
1 c coconut water
2 large handfuls of spinach
1 c chopped frozen mango
2 kiwis
4 sprigs of mint
1 cucumber
2 T chia seeds
Optional: 1 c ice
Spring into Summer Smoothie - serves 1
Ingredients:
1 c coconut water
2 kiwis
12 basil leaves
1 banana
2 c romaine lettuce
1 grapefruit (peeled)
1 T honey
Instructions for all:
Blend until smooth and enjoy!
